Za’atar — Rubbed Pitta Bread


    • Mehudar wholegrain spelt
    • 4 Cups water
    • ¼ Cup oil
    • 1 Tablespoon salt
    • 3 Tablespoons yeast
    • ¼ Cup sugar

    Ingredients for glaze:

    • 4 Tablespoons olive oil
    • 3 Tablespoons Za’atar


Mix all the ingredients in the mixer, until you get a runny consistency.
Using very wet hands, spread the dough on a baking pan into circles 10-15cm in diameter.
Mix the za’atar and oil in a bowl, and brush the pitot with the glaze.
Place the tray on your oven’s upper wire rack and bake for approx. 10 minutes.

For this recipe you can use any one of the following flours:

Wholegrain spelt flour, 70% Spelt Flour, 70% Wholewheat Flour
